One way of channeling my mind away from TTC is cooking. If you want to try Asian food ala Filipino style, here are some of my recipes.
Filipino Beef Pochero
Ingredients:
- 1/2 kilo beef, cut into cubes (select a cut good for stewing)
- 1 piece onion, sliced
- 6 cups of water
- 1 small head of a cabbage quartered
- 1/8 kilo of green beans
- 2 pieces sweet potato
- 5 banana plantains peeled and sliced in the middle
- 1 big can of pork and beans
- 1 whole garlic, minced
- 1/2 cup tomato sauce
- salt and pepper to taste
Boil beef until tender. Remove beef from broth. Set aside broth as this will be used this later on. Fry the plantains until slightly golden brown. Take off the oil and set aside. Saute the garlic and onions in another pot. Then add in the beef. Saute until it changes color. Season with some salt and pepper. Next add in the tomato sauce and 3 cups of broth. Mix and let it boil. Cover and simmer over low medium heat. Next, add in the sweet potatoes. Let it simmer some more until sweet potatoes are cooked. At this point add in the rest of the ingredients: green beans, cabbage, pork and beans and plantains. Just pile them in and cover for a few minutes allowing the veggies to wilt a bit. Afterwards gently mix them until well incorporated into the sauce. Serve beef pochero with plain white rice and enjoy!
Pineapple Chicken
Ingredients:
- 1 whole chicken, cut into serving pieces
- 1 can (500 g) pineapple chunks, unsweetened
- 1 whole garlic, minced
- 1 medium-sized onions, chopped
- fish sauce and pepper, to taste
- water, just enough to cover the meat
Boil chicken in water for 10 minutes to remove the fats from the skin and lessen cholesterol. Remove chicken and set aside 1 cup of chicken broth. In another pot, mix garlic, onion, chicken, chicken broth and pineapple chunks (including the juice). Season with some pepper and fish sauce. Simmer for 20 minutes over low medium heat. Best served with plain white rice.
